Garlic scapes are the curly, slender, and often slightly curled flower stalks that grow from hardneck garlic plants. These scapes emerge from the center of the garlic plant and extend upward, forming a unique and visually striking aspect of the garlic plant's growth cycle.
The scapes have a milder and slightly sweeter flavor than the garlic bulbs themselves and can be used in pestos, salads, soups, stir-fries, etc.
In USDA Hardiness zone 5b we harvest garlic scapes near the end of June.
